Two processes run at once, and only one of them is welcome.
The good one is the meat's own enzymes — calpains and cathepsins — quietly taking the muscle fibres apart. That's the tenderness. Alongside it, water leaves through the surface, and everything that made the meat taste like itself stays behind in less of it. That's the depth of flavour people describe as beefy, or nutty, or just more.
The unwelcome one is bacterial spoilage. Cold, steady airflow and clean handling keep the two apart, which is why everyone who does this pays attention to conditions.
How long it takes depends on the animal and the cut. Roe deer is finished in a few days; a premium beef cut takes weeks, and rewards the wait. Every recipe in the app carries its own target — in aging days or degree days, whichever you'd rather follow.
Somewhere cold
A normal fridge holds it comfortably. This is the part people worry about most and the part that gives least trouble.
Air moving around the meat
Enough that the surface dries rather than sweats. Hanging the cut instead of laying it on a shelf does most of this on its own, because air can reach every side of it. If something isn't drying, a crowded fridge is usually why.

A spare fridge is the usual answer and the easiest one. Nothing to modify — the hook hangs from a shelf rail or a bar, and everything else happens in the app.
The fridge you use every day works too. It's opened often, so conditions move around more than in a spare one — the hook accounts for that, so you're not guessing what those swings did.
A cellar or an unheated garage is how this was done long before fridges, and in the right season it still is. What's different now is that you can see what the air is doing instead of guessing. Anywhere that isn't sealed, hang the protective net as well — keep it clear of the meat and clear of the lower part of the hook, or it will lean on the weight reading.
A wine fridge holds cold well and moves very little air. Hanging helps. Crowding it doesn't.
Set up any of these and you have what people mean by a dry aging chamber. It isn't a machine — it's a cold space with something hanging in it, and something measuring.
No. A fridge you already own is a good place to do this — the cold and most of the airflow are already there. What a purpose-built cabinet adds is convenience, and what none of them add is a way to know when the meat is ready.
A cabinet buys convenience. Building one buys control. Converting a fridge you already have buys neither — it skips the part you don't need, which is a second compressor. All three arrive at the same question, and it isn't the cold.
